cooks note:  I have been on low sodium since 2002  this is because my father and brother died in that year and I began getting the water.  I refuse to allow much and often can't write recipes to other people familiar style as I often omit as much salt as I can.   this is personal choice.   Please alter any recipe here for your personal taste.    They are provided as many people on any food restrictive diet feel they can't eat nothing!
I've got very good food choice's and enjoy sharing fast food with you.             Pamela

Pamela Flavored mash potatoes
 
Garlic                                                              Cheese Potatoes
 
peel about 5 or 6 potatoes
boil them and then drain them.
add 1/4 cup milk or soy milk
choice of 1 :
add 1/8 cup of cheese shred or  
 a large tablespoon of garlic or more
sprinkle with large serving of parlsey
add pepper or use garlic pepper in flavorings choices. add your salt option.  to your taste.
you can add alittle A1 sauce   1 tb spoon if you want a twice baked type.

Chicken Salad
 
1/2 lb chicken boiled and then cooked in
olive oil 1/4 teaspoon.
1/2 head of lettus,  ice berg romain, spinich leaf mix
1 whole tomatoe diced
1 red onion slivered.
1/4 cup blue cheese
1/8 cup chopped pecans or walnuts,  I prefer pecans
1/8 cup of dried cranberries  (option  you can try this if you healed your intestinal problems.)
 
Combined all these ingredients together and serve the cheese and nuts on top.  add a raspberri sauce of your choice or a dressing.  best with rasberri.

Wheat free Gluten free Chili
 
1 or 2 cans of large beans 24 oz or 1 hugh can 6lb can for people on the intestinal healing program,  You can get it at Gordon food service or the larger supermarkets.
 
the amount you choose.  if for two people I suggest starting at 1/2 lb of beef, chicken  on up   (this is if you chose 1 can of course.
seaon your beef as you fry it in chopped onions, peppers.
you decide how much you want in it of onion and peppers.
add rice flour or other non gluten flour to beef.  mix well in fats.
add seasons as follows:
 
you can use 1/2 starters and work your way up on seasonings
 
Garlic pepper     Chili powder       These are simply what I've been using.  though because of  intestinal healing I've got much more garlic  in this mix.  for healing of course!
 
place beans in a large cooking pot.   add tomatoes with zesty chili's.  add some chili powder here.  some garlic too.
 
add meat mixture.  
 
add 1 cup of water.   if the 6 lb can add 4 cups.  its watery but you boil it for thickening.  remember to keep stiring.

Regular Chili
 
In a large cooking pot add a 6lb can of brooks chili beans.   not just the plain one. but the one with sauce.
add 1 16 oz can of tomatoes zesty with chili's
 
in a large skillet.   add onions and peppers to 1/2 tb oil
add beef or chicken.  or even ground turkey
size you prefer.
add 1 seasoning mix of dry chili mix
cook well together.
 
add meat mixture to chili bean mixture and keep stiring.  add to this 1 to 4 cups of water. 
 
note :  I personal water my chili down for intestinal help.  I think also because as an asthmatic I am always dehydrated.   my teeth have stuck to my gums because I get so dry.  so I try to make up for it in this recipes that I place with a large area of where you the reader would decide how much you want. in this I hope to teach you can explore in cooking.  sorta like the pioneers?

Pamela Favorite egg omlette
2 eggs                                                              sea salt sprinkle
diced onion  red or spanish                                 pepper
diced tomatoes                                                  alittle shredded cheese
diced sausage patty  ( cook only 1)                     mrs dash flavoring
 
place soybean oil in a omlette pan and add the eggs  I often move the eggs to make its base thicker.  you can flip this ( if confident) or use a large or 2 large spatulas.  ( I have friends who won't make omlettes. as they say they can't flip them.   Once flip you want to wait a  little time not over cooking this the inner side
I usual add my diced ingredients seasons and cheese at this time in the middle and toward one side.  then I move the free side over it and wait a few second and flip it.   I usual flip it once more before I put it on the plate.  caution in adding your favorite ingredients.   too much often will cause spilling.
 
this is also great for you intestinal healing.  and great for wheat free gluten free

this pizza is wheat, egg, gluten free. yet it most taste like little ceasar because I can eat dairy.  and use their crazy sauce and use pepperonies.   this is symptom free for me and I can make three pizza to four with the mix.   I do not make all the pizza sometime I just make the crust.   simply because its a nice 'bread' taste.    so many rice or gluten free product do not taste good.  any sucess must be tasteful to the suffer.   or else you can forget any diet.  it won't work if you hate it and you will not be able to change your tastebuds in picky eaters.
 
a choice for eating out: 
   
after a few weeks you will know if chicken, rice, soy, lettus and tomatoe are food problems.   you can make a list of food you can eat by study the list that is symptom free and adjusting it to known resturants in your area.  
 
for example I can eat italian dressing.   chicken and potatoes and corn, dairy and this offers alot of selections.   remember not all ice creams are made the same.  check labels and make sure its sugar free and fat or low fat.

here is bobs redmill waffle mix that I make the whole or half bag and freeze waffle for a few weeks to eat.  this is the hardest recipes as these are for people who cannot have spelt.  as Linda educated me in the book.  I chose the harder way to be wheat and gluten free.   so I am suggesting this products as they taste best.  in my case I have to use a egg sub.    and the above recipe for eggs is now egg whites.   one thing about eggs is you can be parital allergic.  though my own is not confirmed.  but it nice to have.   Tastefully different is available on the website check their stores or search for them if you are in places where food nutritional stores are not located near you.

This recipe is not only good for you in heart,  kidney and liver works but intestinal healing.

I am still seeking a good coffee cake recipe.   they have come out with great gluten free donuts.  expensive.  sadly.    I make great cookie recipes with sub spelt flour for wheat.  but still no coffee cake recipe and I been trying for 5 years now.   anyone have one send it to Cosner1984@yahoo.com  with coffee cake on subject and type it is.  spelt or gluten free.   specify which mix and how you do it.  thanks.   I still aim at making one.  mine usual have great mix for thinner types like a pizza mix.   too much gluten mix and forget it.  alittle goes along way.
