Bobs red mills cake recipe package.  or your favorite mix
 
wheat free or gluten free
 
place in 1/4 baker sheet for cakes.  this makes a thin single layer of cake.  great for recipes for gluten or wheat free
I prefer thin layer of cake compared to the bigger wheat cakes as taste is better for a wheat or gluten free to be smaller layer.
 
first layer
on this layer either chocolate, or lighter cake.  
 
Second Layer
you place reduce calorie pudding.  if making choc make choc pudding reduce calorie mix
 
third layer
 
choose strawberries for choclate layer in pan non allergy type fruit.  for white or yellow cakes place pineapple on this layer above the puddin.
 
Fourth layer
place for chocolate  the cool whip chocolate layer
place for ligher cake reg or lite cool whip and you can place  in frig til serving.

an excellent pizza for wheat and gluten suffers is as follows
 
I package of 7 inch Pizza crust from Kinnikinnick foods.
 
add to it one container of crazy sauce from little ceasers pizza.
 
add your type of cheese that you can use.  for me I use reg cheese as I am not allergic.  modify to your need each ing.
 
then add toppings of your choice that you can have.  I put hormel pepperoni 
 
place on a metal ware, wire or baking stone.  preheat oven to 375 degrees   and place when ready your pizza will be one in 10 to 15 min depending on when your crust browns.  and cheese is melted.  now you can eat right next to anyone this pizza.   I have not found a better spelt product so I stick with this one.   its easy for us fatigue people.

Breads Pancakes, waffles recipes
You may consider a protien bread if the ingredients agree with you.  I show no problem to eggs unless they are cooked in the wrong fats perhaps.  (it actually isn't concrete yet though ha ha.)
 
 

basic Pancake mix
 
1/2 cup soy powder                  or soy flour
3 eggs   or liquid eggs sub you can tolerate
1/2 cup water
1/4 teaspoon salt  or no salt
cooking oil  
 
try also adding walnuts, pecans, rasin, blueberries to the mix to add flavour to pancakes or waffles. 
 
add ingredient to a blender or mix in a bowl with a high speed mixer.
 
heat a 8 inch omrlrt pan or skillet covered with oil. When oil is hot add 3 tb spoons of batter
 
spread evenly in pan.   the more you spread for instance could mean a soft tortia or a crepe.  beside the pancake or muffin to make say mcmuffin foods.
 
With this batter you should get 4 pancakes or other.  you can use if for other ways of serving as I am aware it can be used for canneloni, lasagna, blitzes and even pizza.
 
enjoy your way.  this is done for pancake or waffles.

variation to above recipe:
 
Pizza
add one pancake with no other ingredients added of course.
2 tables spoons of unsweetened tomatoe sauce
3/4 cup shredded mozarella
some other variations
add 2 medium tomatoes
1/2 cup of parmesan cheese
 
You may place this in the broiler provided you watch it.
you can place it in the oven with spreading sauce and adding cheese for a plain pizza.  
I say 481 degrees for no more than the time to melt the cheese.   the bread is already cooked.
 
 

adkins recipe:
basic protien bread
 
3 eggs, separated room temp
2 tablespoon sour cream
2 tablespoon buter, melted
1/2 cup soya powder
1 tablespoon baking powder
 
preheat oven to 350 degrees
combine eggs yolks and all other ingredients.  mix well.  beat eggs whites until stiff and fold into mixture.  but into butter bread pan and bake at 350 for 50 minutes.  or until golden
store in refrigerator

Remeber I highly recommend a pizza mix which you can ingredient or egg free as I now must do.   its
Tastefully gluten free out of brighton Michigan.   its the best mix I have tried and am writing it in here to help other to enjoy pizza again.  
 
its a thicker crust but you can make it thin or whatever size and freeze it as I do.   I freeze only the bread and purchase little ceasar crazy sauce to put on with my own items.  you can make it fat free with that type of cheese. lower temp by 25 degrees if you do.   hope this makes people happy at a good tasting mix out there!

coffee Cake
 
this is still hard.   but you can try a Kinnikinnick  pizza crust with warming it to a gold brown and adding pillsbury sugar reduced frosting as a layer.  add some nuts.

as you know wheat free and gluten free products tend to be a better served in smaller or thinner portions to allow for the filling up once inside of us.
 
so prepare a cake or brownie recipe    place in individual bowls for a lava type cake.   and you can eat when you want as you have six or more servings of one frozen goodie.
 
follow package directions and place cool lava cake upside down.  frost with reduce sugar frosting for the first layer.  add some nuts if you are not allergic. 
you can freeze this cake serving size perfect to feel not left out of goodie times.
 
you can add chocolate dairy topping cool whip.  lower calorie and very filling and pretty to look upon.

I am still seeking a good coffee cake recipe.   they have come out with great gluten free donuts.  expensive.  sadly.    I make great cookie recipes with sub spelt flour for wheat.  but still no coffee cake recipe and I been trying for 5 years now.   anyone have one send it to Cosner1984@yahoo.com  with coffee cake on subject and type it is.  spelt or gluten free.   specify which mix and how you do it.  thanks.   I still aim at making one.  mine usual have great mix for thinner types like a pizza mix.   too much gluten mix and forget it.  alittle goes along way.
