I've actually used a process pasta sauce.  it did not list flour and that was all I was concerned at.  Yet lately gluten and other problems is where I am seeing a return to my garden to can my own homemade pasta sauce.

you can cook your pasta choice with your allowable sauce.
You need to keep a journal for this.  as it need to be tested when it early in the diet and even when you are further along.
 
I often cook two pasta at once because saddly the rice and corn is up to 2.5 times the price.  and I often feel they will appreciate the rice.  for most of this year I cook two types of pasta.   added beef to theirs.  and I would not cross contaminate our cooking utensils.
 
for my rice I would use.
the entire package.  as I would cook to manufactors suggestion.  on some pasta they often don't boil them as they cook in the oven. 
 
I would have a 12- 16 oz jar of sauce and I would cook my meat seperately.
this would be chicken or turkey.    I would drain it and even water rinse it for saturated fats. 
 
I would add fresh herbs, and mrs dash flavorings. 
 
With that I would then mix up the meat and the sauce together.  then I would combined the noodles which were draining.
 
what ever your choice the recipes are on the pasta labels.
 
I would recommend eating a fresh salad and a fresh fruit salad.  I used to hate to go out to eat as pasta meant breadsticks.  Now I do not miss it.  I go out for chicken, tacos, and steaks dinners.  I can actually eat without desiring the breadstick.  you actually get used to it.  and I know spelt is better than most bread when it comes to gluten though your out of luck.  though I would try adding extra eggs.  If you aren't allergic to them.  My allergy shows up as flour.

I think planning a meal in a set up of food you can eat is best. for instance
3 days of oatmeal everyother day eaten
3 day of yogurt for one of the smaller meals.
3 day of banana for fluid suffers.
3 salad days for lunch. and alternate a real meat of meat potatoe or fish and mach and cheese.  with veggie.
3 days of soups homemade if desired. 
3 days of fruit for a meal ( yes I said fruit as a meal)
limit carbs and eat the smallest sweet if you have a sweet tooth.  they have mini rolos and mini reeses which are tiny but satisfy. Remember This meal for fluid suffer you don't count the carbs as you need the repairing work of fruit carbs for vascular.  also use coconut oil.  which is 76 degree solids or above it liquid just like lymph is in your body. remember move neck up and down 5  x and head side to side 10 x each morning and afternoon for fluid flow in the lymph system.
1 meal of breakfast meat and have three bad days of flour.  or spelt. which has less flour.
have two reg meals which can be used out to eat style.
